What’s new at the renovated Buffet at Aria

The executive chef at one of the most polished hotels on the Strip heard customers comparing his buffet to a bathroom. "We used to have these tiles everywhere, and people said it reminded them of a shower," said Shawn Smilie, head chef of the Buffet at Aria. "That had to change." Today, just a hint of tile remains. The buffet recently got a facelift. It was only 3 years old. Owners wanted to make it more appealing and appetizing and display a larger selection of food. They cut corners on the variety and quality of food. They had mostly cheap pasta dishes and minimal amounts of meat. Shrimp were mostly the cheap farm raised stuff that they serve in the Olive Garden. Deserts were tiny and cheap. I had two high roller friends in last summer for the buffet and they thought the quality of food was bad. The casino lost their business for a long time. They can change the decor all they want but if the food is not up to high standards then forget about it. Who is kidding who. Nobody pay over $30 for cheap pasta dishes. No one.
How about a rebate for locals, Aria?
I never saw wild shrimp at a buffet except in the south. Belliggio, Palms, etc. Buffets start out good and get more expensive and bring in cheap food. . at least the flu virus has somewhere to live for now.
these same people probably hated cafeteria food in high school and/or college. but you know what? a cafeteria by any other name (i.e., buffet) is still a cafeteria. cheap food in mass quantities. and it all comes from the same food distributors in town; sysco and united foodservices to name two. there is no big name chef behind the dishes. it's all pre-made, pre-packaged. soup even comes in big plastic bags. that's why it all looks and tastes the same no matter which hotel you are in when you eat it.
If they're copying Baccanal at Caesars Palace, they're going to fail. That's the worst buffet in town. And one of the most expensive!
